How To Make New Potatoes with Lemon & Chive Butter

Ingredients
- 1.5 lbs new potatoes, halved
- 3 tbsp butter, softened
- 1 tbsp lemon juice
- 1 tbsp chives, chopped
- Salt, to taste
Instructions

Bring a pot of salted water to a boil. Add the halved new potatoes and cook until tender, about 10-15 minutes.

While the potatoes are cooking, mix the softened butter, lemon juice, and chopped chives in a small bowl. Season with salt.

Drain the cooked potatoes and transfer them back to the pot. Add the lemon and chive butter and toss until the potatoes are coated.

Serve the new potatoes with lemon and chive butter as a delicious side dish.
