How To Make Crispy Potato Skins with Creamy Chive Dip

Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons fresh chives, chopped
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean and dry them thoroughly.

Rub the potatoes with olive oil, then sprinkle with salt and pepper.

Place the potatoes on a baking sheet and bake for 45-50 minutes, or until they are crisp on the outside and tender on the inside.

While the potatoes are baking, prepare the dip by combining sour cream, mayonnaise, chives, garlic, lemon juice, salt, and pepper in a bowl. Mix well.

Once the potatoes are done, remove them from the oven and let them cool slightly.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skins.

Increase the oven temperature to 450°F (230°C).

Place the potato skins back on the baking sheet and bake for an additional 10-15 minutes, or until they are golden and crispy.
