Ingredients

  • 4 smoked haddock fillets
  • 2 medium tomatoes, diced
  • 1/4 cup chopped fresh chives
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the smoked haddock fillets on a baking sheet and season with salt and pepper.

  3. Bake in the preheated oven for 15 minutes, or until the fish is cooked through and flakes easily with a fork.

  4. In a small bowl, combine the diced tomatoes, chopped chives, olive oil, lemon juice, salt, and pepper. Mix well.

  5. Remove the smoked haddock from the oven and place on serving plates.

  6. Spoon the tomato and chive dressing over the top of each fillet.

  7. Serve hot and enjoy!
