How To Make Mango & Passion Fruit Souffles

Ingredients

  • 2 ripe mangoes, peeled and diced
  • 4 passion fruits, halved and pulp scooped out
  • 4 egg whites
  • 1/4 cup sugar
  • 1 tsp cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C). Grease 4 ramekins with butter and sprinkle with sugar.

  2. Place the diced mangoes and passion fruit pulp into a blender or food processor and blend until smooth.

  3. In a clean mixing bowl, whisk the egg whites until stiff peaks form. Gradually add in the sugar and continue to whisk until glossy.

  4. Gently fold the mango and passion fruit puree into the egg whites until well combined.

  5. In a small bowl, dissolve the cornstarch in a little water to make a slurry. Gradually add the slurry to the mango and passion fruit mixture and fold it in gently.

  6. Divide the mixture equally between the prepared ramekins and smooth the tops with a spatula.

  7. Place the ramekins on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the souffles have risen and are golden brown on top.

  8. Serve immediately and enjoy!
