Ingredients

  • 1 lb Brussels sprouts, halved
  • 2 red onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.

  3. Roast the sprouts in the preheated oven for 20-25 minutes, or until they are tender and starting to brown.

  4. While the sprouts are roasting, heat a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelised and golden brown, about 10-15 minutes.

  5. In a small bowl, whisk together the balsamic vinegar and honey.

  6. Remove the sprouts from the oven and transfer them to a large mixing bowl. Pour the balsamic-honey mixture over the sprouts and toss until they are coated evenly.

  7. Serve the glazed sprouts topped with the caramelised red onions.
