A delicious and tropical dessert made with sticky coconut rice, ripe mango and tangy passion fruit.

Ingredients

  • 1 cup sticky rice
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1 ripe mango, diced
  • 2 passion fruits, pulp removed

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear.

  2. In a saucepan, combine the sticky rice, coconut milk, and sugar.

  3. Bring the mixture to a boil, then reduce the heat to low and cover.

  4. Allow the rice to simmer for about 15-20 minutes, or until it is tender and all the liquid has been absorbed.

  5. Remove the rice from the heat and let it sit, covered, for 5 minutes.

  6. Fluff the rice with a fork and transfer it to serving bowls.

  7. Top each bowl of rice with diced mango and passion fruit pulp.

  8. Serve warm or chilled, and enjoy!
