Ingredients

  • 2 leeks, sliced
  • 2 tbsp butter
  • 2 cloves of garlic, minced
  • 4 cups potatoes, peeled and diced
  • 1 cup grated cheddar cheese
  • 1/2 cup milk
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, melt the butter over medium heat. Add the leeks and garlic and sauté until softened.

  3. In a separate pot, boil the potatoes until tender. Drain and set aside.

  4. In a large bowl, whisk together the eggs, milk, salt, and pepper.

  5. In a greased pie dish, layer the cooked leeks, potatoes, and cheese. Pour the egg mixture on top.

  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the filling is set.

  7. Allow to cool for a few minutes before serving.
