Ingredients

  • 1 tbsp olive oil
  • 2 leeks, thinly sliced
  • 2 potatoes, peeled and diced
  • 100g cheddar cheese, grated
  • Salt and pepper, to taste
  • 2 sheets of ready-made puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

  2. Heat the olive oil in a large skillet over medium heat. Add the leeks and cook until soft and translucent.

  3. Add the diced potatoes to the skillet and cook until they are tender. Season with salt and pepper to taste.

  4. Transfer the leek and potato mixture to a bowl and allow it to cool slightly. Stir in the grated cheese.

  5. Roll out the puff pastry on a floured surface. Using a small plate or pastry cutter, cut out circles from the pastry.

  6. Spoon the leek, cheese, and potato mixture onto one half of each pastry circle. Fold the other half of the pastry over the filling and press the edges to seal.

  7. Place the pasties on the prepared baking tray and brush them with the beaten egg.

  8. Bake in the preheated oven for 20-25 minutes, or until the pasties are golden brown and crispy.

  9. Allow the pasties to cool slightly before serving. Enjoy!
