How To Make Cheesy Leek & Potato Pie
A delicious and comforting pie filled with leeks and potatoes, topped with melted cheese.

Ingredients
- 2 leeks, sliced
- 4 potatoes, peeled and thinly sliced
- 1 cup grated cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the leeks and cook until they are softened, about 5 minutes.

Add the flour to the skillet and stir until well combined with the leeks. Cook for another 2 minutes.

Gradually add the milk to the skillet, stirring constantly until the mixture thickens.

Remove the skillet from heat and stir in half of the grated cheese. Season with salt and pepper.

In a greased baking dish, layer the sliced potatoes and the leek mixture, ending with a layer of potatoes on top. Sprinkle the remaining cheese over the potatoes.

Cover the baking dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the potatoes are golden and cooked through.

Serve the cheesy leek & potato pie hot.
