Ingredients

  • 2 cans of hot butter beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the hot butter beans, red bell pepper, red onion, cherry tomatoes, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss gently to coat.

  4. Allow the salad to marinate for at least 10 minutes before serving.

  5. Serve chilled and enjoy!
