Ingredients
- 1 can of butter beans, drained and rinsed
- 1 cucumber, sliced
- 1 bunch of radishes, thinly sliced
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh dill, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- salt and pepper to taste
Instructions

In a large mixing bowl, combine the butter beans, cucumber slices, radish slices, red onion slices, and fresh dill.

In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Pour the dressing over the salad and toss to combine.
