Ingredients

  • 1 can of butter beans, drained and rinsed
  • 1 cucumber, sliced
  • 1 bunch of radishes, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the butter beans, cucumber slices, radish slices, red onion slices, and fresh dill.

  2. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
