How To Make Herby Couscous with Citrus & Pomegranate Dressing

Ingredients
- 1 cup couscous
- 1 1/4 cups boiling water
- 1/4 cup fresh mint, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 2 green onions, thinly sliced
- Zest of 1 lemon
- Zest of 1 orange
- 1/4 cup pomegranate arils
- 1/4 cup sliced almonds
- Salt and pepper to taste
- dressing:
- Juice of 1 lemon
- Juice of 1 orange
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions

In a large bowl, combine the couscous and boiling water. Cover and let sit for 5 minutes. Fluff with a fork.

In a separate bowl, whisk together the lemon juice, orange juice, olive oil, honey, salt, and pepper to make the dressing.

Add the mint, parsley, green onions, lemon zest, and orange zest to the couscous. Mix well.

Pour the dressing over the couscous and toss to coat.

Garnish with pomegranate arils and sliced almonds.

Season with salt and pepper to taste.

Serve chilled or at room temperature.
