Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup chopped fresh herbs (parsley, mint, dill)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pomegranate seeds
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water, then cook it in a pot with water according to package instructions.

  2. Once cooked, fluff the quinoa with a fork and let it cool.

  3. In a large bowl, combine the cooked quinoa, chopped herbs, feta cheese, and pomegranate seeds.

  4. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  5. Pour the dressing over the quinoa mixture and toss to combine.

  6. Taste and adjust seasonings if needed.

  7. Serve the salad chilled or at room temperature.
