How To Make Herby Quinoa, Feta & Pomegranate Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup chopped fresh herbs (parsley, mint, dill)
- 1/2 cup crumbled feta cheese
- 1/2 cup pomegranate seeds
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water, then cook it in a pot with water according to package instructions.

Once cooked, fluff the quinoa with a fork and let it cool.

In a large bowl, combine the cooked quinoa, chopped herbs, feta cheese, and pomegranate seeds.

In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the quinoa mixture and toss to combine.
