Ingredients

  • 2 large carrots, peeled and cut into matchsticks
  • 2 parsnips, peeled and cut into matchsticks
  • 2 sweet potatoes, peeled and cut into cubes
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the carrots, parsnips, sweet potatoes, and red onion with olive oil, smoked paprika, maple syrup, salt, and pepper.

  3. Spread the vegetables evenly on a baking sheet.

  4. Roast in the preheated oven for about 40 minutes, or until the vegetables are tender and slightly caramelized.

  5. Remove from the oven and let cool for a few minutes before serving.
