Ingredients
- 2 large carrots, peeled and cut into matchsticks
- 2 parsnips, peeled and cut into matchsticks
- 2 sweet potatoes, peeled and cut into cubes
- 1 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon maple syrup
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the carrots, parsnips, sweet potatoes, and red onion with olive oil, smoked paprika, maple syrup, salt, and pepper.

Spread the vegetables evenly on a baking sheet.

Roast in the preheated oven for about 40 minutes, or until the vegetables are tender and slightly caramelized.
