How To Make Grilled Mediterranean Veg with Bean Mash

Ingredients
- 1 eggplant, sliced
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 can (15 oz) cannellini beans, rinsed and drained
- 2 cloves of garlic, minced
- 2 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
Instructions

Preheat grill to medium-high heat.

In a large bowl, toss eggplant, zucchini, bell peppers, and onion with olive oil, salt, and pepper.

Grill the vegetables until they are charred and tender, about 10-12 minutes, turning occasionally.

In a separate bowl, mash the cannellini beans with a fork until smooth.

Stir in minced garlic, lemon juice, parsley, and basil into the mashed beans.

Season with salt and pepper to taste.

Serve the grilled vegetables with a generous scoop of bean mash on top.
