Ingredients

  • 1 eggplant, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 cloves of garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped

Instructions

  1. Preheat grill to medium-high heat.

  2. In a large bowl, toss eggplant, zucchini, bell peppers, and onion with olive oil, salt, and pepper.

  3. Grill the vegetables until they are charred and tender, about 10-12 minutes, turning occasionally.

  4. In a separate bowl, mash the cannellini beans with a fork until smooth.

  5. Stir in minced garlic, lemon juice, parsley, and basil into the mashed beans.

  6. Season with salt and pepper to taste.

  7. Serve the grilled vegetables with a generous scoop of bean mash on top.
