How To Make Smoked Haddock & Corn Hash

Ingredients

  • 1 lb smoked haddock fillets, skin removed
  • 2 cups frozen corn
  • 2 potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until softened.

  3. Add the diced potatoes to the skillet and cook for about 5 minutes, until they start to brown.

  4. Meanwhile, season the haddock fillets with smoked paprika, salt, and pepper.

  5. Push the potatoes to one side of the skillet and place the haddock fillets in the empty space. Cook for 2-3 minutes on each side until they are opaque and easily flake apart.

  6. Remove the haddock from the skillet and flake it into small pieces using a fork. Set aside.

  7. Add the frozen corn to the skillet and cook for another 5 minutes, until heated through.

  8. Return the flaked haddock to the skillet and mix everything together. Cook for another 2 minutes to allow the flavors to meld.

  9. Serve the smoked haddock and corn hash hot, garnished with fresh parsley.
