How To Make Haricot Bean & Truffle Mash

Ingredients
- 2 cans of haricot beans, drained and rinsed
- 2 tablespoons of truffle oil
- 1 clove of garlic, minced
- 1/4 cup of vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large saucepan, heat the truffle oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the haricot beans and vegetable broth to the saucepan. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

Use a potato masher or a fork to mash the beans until desired consistency is reached. If the mixture is too thick, add a little more vegetable broth.

Season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.

Serve the haricot bean and truffle mash hot, garnished with fresh chopped parsley.
