How To Make Green Fritters

Serves:

Ingredients

  • 2 cups spinach, finely chopped
  • 1 cup zucchini, grated
  • 1/2 cup green peas
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin
  • 2 eggs, beaten
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the chopped spinach, grated zucchini, green peas, green onions, and fresh parsley.

  2. In a separate bowl, mix together the all-purpose flour, baking powder, salt, black pepper, and cumin.

  3. Add the beaten eggs to the flour mixture and stir until well combined.

  4. Pour the egg mixture over the vegetables and mix until everything is evenly coated.

  5. Heat vegetable oil in a frying pan over medium heat.

  6. Drop spoonfuls of the fritter mixture into the hot oil and flatten with the back of a spoon.

  7. Cook for 2-3 minutes on each side until golden brown and crispy.

  8. Remove the fritters from the pan and drain on a paper towel to remove excess oil.

  9. Serve the green fritters hot with your favorite dipping sauce.
