  • 2 medium courgettes, grated
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

  2. Place the grated courgettes in a clean kitchen towel and squeeze out any excess moisture.

  3. In a large bowl, combine the grated courgettes, Parmesan cheese, flour, garlic, green onions, parsley, salt, black pepper, and beaten eggs. Mix until well combined.

  4. Heat the olive oil in a large skillet over medium heat. Drop small portions of the courgette mixture into the skillet, flattening them slightly with a spatula. Cook for about 2-3 minutes per side or until golden brown.

  5. Transfer the cooked fritters to the prepared baking sheet. Repeat with the remaining courgette mixture.

  6. Bake the fritters in the preheated oven for 10-12 minutes, or until they are crispy and golden brown.

  7. Serve the baked courgette fritters warm with a side of your favorite dipping sauce.
