How To Make Easy Zucchini Fritters

- 2 medium zucchinis, grated
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 2 green onions, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Vegetable oil, for frying
Instructions

Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine zucchini, flour, Parmesan cheese, minced garlic, parsley, green onions, salt, and black pepper. Mix well.

Add beaten eggs to the zucchini mixture and stir until all ingredients are well combined.

Heat vegetable oil in a large skillet over medium heat.

Scoop about 2 tablespoons of the zucchini mixture and flatten it to form a fritter. Place it in the heated skillet and repeat for the remaining mixture, making sure to leave enough space between fritters.

Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
