How To Make Carrot & Halloumi Fritters with Coriander Dip

Ingredients
- 2 large carrots, grated
- 200g halloumi cheese, grated
- 1/4 cup all-purpose flour
- 1/4 cup breadcrumbs
- 2 green onions, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Vegetable oil, for frying
- coriander dip ingredients:
- 1 cup Greek yogurt
- 1/4 cup fresh coriander, chopped
- 1 clove of garlic, minced
- Juice of 1/2 lemon
- Salt and pepper, to taste
Instructions

In a large bowl, combine the grated carrots, halloumi cheese, flour, breadcrumbs, green onions, garlic, cumin powder, paprika, salt, and pepper. Mix well until combined.

Heat vegetable oil in a pan over medium heat.

Take a small handful of the carrot and halloumi mixture and shape it into a fritter. Repeat with the remaining mixture.

Fry the fritters in the hot oil until golden brown and crispy on both sides. This will take about 3-4 minutes per side. Place the cooked fritters on a paper towel-lined plate to absorb any excess oil.

In a small bowl, prepare the coriander dip by mixing together the Greek yogurt, fresh coriander, minced garlic, lemon juice, salt, and pepper. Stir until well combined.

Serve the carrot and halloumi fritters hot with the coriander dip on the side.
