Ingredients

  • 1 cup of corn kernels
  • 1/2 cup of all-purpose flour
  • 1/4 cup of cornmeal
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of milk
  • 1 egg, beaten
  • 1/4 cup of chopped green onions
  • Vegetable oil, for frying

Instructions

  1. In a bowl, combine the corn kernels, flour, cornmeal, baking powder, salt, and black pepper.

  2. In a separate bowl, mix together the milk, beaten egg, and chopped green onions.

  3. Pour the wet mixture into the dry mixture and stir until well combined.

  4. Heat vegetable oil in a frying pan over medium heat.

  5. Drop spoonfuls of the corn batter into the hot oil and flatten slightly with the back of a spoon.

  6. Fry the fritters for about 2-3 minutes on each side, or until golden brown.

  7. Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.

  8. Serve the corn fritters warm with your favorite dipping sauce or salsa.
