Ingredients

  • 1 lb green beans, trimmed
  • 2 shallots, thinly sliced
  • 2 cloves of garlic, minced
  • 1/4 cup sliced almonds, toasted
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 3-4 minutes. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the shallots and garlic and sauté until softened, about 2 minutes.

  3. Add the cooked green beans to the skillet and toss to coat with the shallot and garlic mixture. Cook for an additional 2 minutes, or until heated through.

  4. Season with salt and pepper to taste. Sprinkle with toasted almonds before serving.
