How To Make Beer-Braised Lentils

Serves:

Ingredients

  • 1 cup of green lentils
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 bottle of beer (preferably dark or amber)
  • 2 cups of vegetable broth
  • 2 tablespoons of tomato paste
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.

  2. In a large pot, heat some olive oil over medium heat and sauté the onion and garlic until fragrant.

  3. Add the carrots and celery, and cook for another 3-4 minutes.

  4. Pour in the beer, vegetable broth, tomato paste, and bay leaf. Stir to combine.

  5. Add the lentils and season with salt and pepper.

  6. Bring the mixture to a boil, then reduce heat to low and simmer for about 25 minutes or until the lentils are tender.

  7. Remove the bay leaf and adjust the seasoning if needed.

  8. Serve the beer-braised lentils hot, garnished with fresh parsley.
