Ingredients

  • 2 medium-sized swedes, peeled and cubed
  • 1 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 8-10 fresh sage leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the swede cubes in a large pot of salted water for about 15-20 minutes, or until tender. Drain and let cool slightly.

  2. In a large mixing bowl, mash the cooked swedes with a fork until smooth. Add the flour, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.

  3. Dust a clean surface with flour and roll the swede mixture into long ropes, about 1 inch thick. Cut the ropes into bite-sized pieces and press each piece with a fork to create texture.

  4. Bring a large pot of salted water to a boil. Cook the gnocchi in batches for about 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.

  5. In a separate pan, melt the butter over medium heat. Add the sage leaves and cook until crispy, about 1-2 minutes on each side.

  6. Serve the swede gnocchi with the crispy sage leaves on top. Enjoy!
