How To Make Cumin-spiced Halloumi with Corn & Tomato Slaw

Serves:

Ingredients

  • 250g halloumi cheese, sliced
  • 1 tsp cumin powder
  • 2 tbsp olive oil
  • 2 ears of corn, kernels removed
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 jalapeno pepper, seeded and minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. In a small bowl, combine the cumin powder and olive oil. Brush the halloumi slices with the mixture on both sides.

  2. Heat a grill pan over medium heat and grill the halloumi slices for 2-3 minutes on each side until nicely charred. Set aside.

  3. In a large bowl, combine the corn kernels, cherry tomatoes, red onion, jalapeno pepper, lime juice, salt, and pepper. Toss well to combine.

  4. Serve the grilled halloumi slices on a plate and top with the corn and tomato slaw. Garnish with fresh cilantro.
