How To Make Cumin-spiced Halloumi with Corn & Tomato Slaw

Ingredients
- 250g halloumi cheese, sliced
- 1 tsp cumin powder
- 2 tbsp olive oil
- 2 ears of corn, kernels removed
- 2 cups cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 jalapeno pepper, seeded and minced
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions

In a small bowl, combine the cumin powder and olive oil. Brush the halloumi slices with the mixture on both sides.

Heat a grill pan over medium heat and grill the halloumi slices for 2-3 minutes on each side until nicely charred. Set aside.

In a large bowl, combine the corn kernels, cherry tomatoes, red onion, jalapeno pepper, lime juice, salt, and pepper. Toss well to combine.

Serve the grilled halloumi slices on a plate and top with the corn and tomato slaw. Garnish with fresh cilantro.
