How To Make Halloumi & Bacon Rolls

Ingredients

  • 8 slices of halloumi cheese
  • 8 slices of bacon
  • 4 whole wheat tortillas
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1/4 cup of mayonnaise
  • 1 tbsp of olive oil

Instructions

  1. Preheat a non-stick pan over medium heat.

  2. Wrap each slice of halloumi cheese with a slice of bacon.

  3. Place the bacon-wrapped halloumi rolls in the pan and cook for 3-4 minutes on each side, until the bacon is crispy and the cheese is golden.

  4. Meanwhile, heat the tortillas in a separate pan or microwave until warm.

  5. Spread mayonnaise over each tortilla.

  6. Place 2 halloumi and bacon rolls on each tortilla.

  7. Top with sliced avocado and tomato.

  8. Roll up the tortilla tightly, tucking in the sides as you go.

  9. Heat the olive oil in a clean pan over medium heat.

  10. Place the rolled tortillas in the pan, seam side down, and cook for 2-3 minutes on each side, until crispy and lightly browned.

  11. Remove from the pan and cut each roll in half.

  12. Serve warm and enjoy!
