How To Make Piri-piri Halloumi & Slaw Wraps with Sweet Potato Wedges

Ingredients
- 1 block of halloumi cheese, sliced into strips
- 4 whole wheat tortilla wraps
- 2 sweet potatoes, cut into wedges
- 1/4 cup of olive oil
- 2 tbsp of piri-piri sauce
- 2 cups of shredded cabbage
- 1 carrot, grated
- 1/4 cup of mayonnaise
- 1 tbsp of lemon juice
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Toss the sweet potato wedges with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, until golden and crispy.

In a bowl, combine the shredded cabbage, grated carrot, mayonnaise, lemon juice, salt, and pepper. Mix well to make the slaw.

In a separate bowl, mix the piri-piri sauce with olive oil. Coat the halloumi strips with the sauce mixture.

Heat a grill pan or skillet over medium heat. Cook the halloumi strips for 2-3 minutes on each side, until golden and crispy.

Warm the tortilla wraps according to package instructions.

Assemble the wraps by spreading a spoonful of the slaw on each wrap. Place a few halloumi strips on top, then roll up tightly.

Serve the halloumi wraps with the sweet potato wedges on the side.
