Serves:

Ingredients

  • 1 block of halloumi cheese, sliced into strips
  • 4 whole wheat tortilla wraps
  • 2 sweet potatoes, cut into wedges
  • 1/4 cup of olive oil
  • 2 tbsp of piri-piri sauce
  • 2 cups of shredded cabbage
  • 1 carrot, grated
  • 1/4 cup of mayonnaise
  • 1 tbsp of lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Toss the sweet potato wedges with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, until golden and crispy.

  3. In a bowl, combine the shredded cabbage, grated carrot, mayonnaise, lemon juice, salt, and pepper. Mix well to make the slaw.

  4. In a separate bowl, mix the piri-piri sauce with olive oil. Coat the halloumi strips with the sauce mixture.

  5. Heat a grill pan or skillet over medium heat. Cook the halloumi strips for 2-3 minutes on each side, until golden and crispy.

  6. Warm the tortilla wraps according to package instructions.

  7. Assemble the wraps by spreading a spoonful of the slaw on each wrap. Place a few halloumi strips on top, then roll up tightly.

  8. Serve the halloumi wraps with the sweet potato wedges on the side.
