How To Make Spiced Chickpeas with Halloumi

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 250g halloumi cheese, sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, combine the chickpeas, olive oil, cumin, paprika, coriander, chili powder, salt, and pepper. Toss until the chickpeas are well coated.

  2. Heat a grill pan or skillet over medium heat. Add the sliced halloumi and cook for about 2-3 minutes on each side, until golden brown and crispy.

  3. In the meantime, preheat the oven to 180°C (350°F).

  4. Transfer the spiced chickpeas to a baking sheet and spread them out in an even layer. Roast in the preheated oven for about 15-20 minutes until crispy.

  5. Serve the spiced chickpeas with the grilled halloumi slices. Garnish with fresh cilantro.
