  • 4 medium-sized potatoes
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Peel the potatoes and cut them into round slices about 1 inch thick.

  3. In a large skillet, melt the butter over medium heat. Add the minced garlic, rosemary, and thyme. Cook for 2 minutes.

  4. Add the potato slices to the skillet, arranging them in a single layer. Season with salt and pepper.

  5. Cook the potatoes for about 5 minutes, or until they are golden brown on one side.

  6. Flip the potatoes and cook for an additional 5 minutes.

  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the potatoes are tender and caramelized.

  8. Serve the herby fondant potatoes hot as a side dish.
