How To Make Courgette Frittatas

Ingredients

  • 4 medium-sized courgettes, grated
  • 6 eggs
  • 1/2 cup grated cheese
  • 1/4 cup chopped fresh herbs (such as parsley or basil)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat oven to 180°C (350°F). Grease a muffin tin with olive oil.

  2. In a large bowl, whisk the eggs. Add the grated courgettes, cheese, herbs, salt, and pepper. Mix well.

  3. Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.

  4. Bake in the preheated oven for 20 minutes, or until the frittatas are set and golden brown on top.

  5. Remove from the oven and allow to cool for a few minutes before removing the frittatas from the tin.

  6. Serve warm or at room temperature.
