How To Make Courgette Frittatas

Ingredients
- 4 medium-sized courgettes, grated
- 6 eggs
- 1/2 cup grated cheese
- 1/4 cup chopped fresh herbs (such as parsley or basil)
- Salt and pepper to taste
- Olive oil for cooking
Instructions

Preheat oven to 180°C (350°F). Grease a muffin tin with olive oil.

In a large bowl, whisk the eggs. Add the grated courgettes, cheese, herbs, salt, and pepper. Mix well.

Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 20 minutes, or until the frittatas are set and golden brown on top.

Remove from the oven and allow to cool for a few minutes before removing the frittatas from the tin.

Serve warm or at room temperature.
