Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup milk
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onion
  • 2 tbsp chopped fresh cilantro
  • 1 egg
  • 1 tbsp vegetable oil
  • 2 ripe avocados, diced
  • 1/4 cup diced red onion
  • 1/4 cup diced tomato
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cornmeal, flour, baking powder, salt, and black pepper.

  2. In a separate bowl, whisk together the milk, red bell pepper, green onion, cilantro, egg, and vegetable oil.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a skillet over medium heat and lightly grease with oil.

  5. Drop spoonfuls of the cornmeal batter onto the skillet and cook for 3-4 minutes on each side, or until golden brown.

  6. In a bowl, combine the diced avocados, red onion, tomato, lime juice, salt, and pepper to make the avocado salsa.

  7. Serve the corn cakes topped with the avocado salsa.
