How To Make Corn Cakes with Avocado Salsa

Ingredients
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup milk
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onion
- 2 tbsp chopped fresh cilantro
- 1 egg
- 1 tbsp vegetable oil
- 2 ripe avocados, diced
- 1/4 cup diced red onion
- 1/4 cup diced tomato
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the cornmeal, flour, baking powder, salt, and black pepper.

In a separate bowl, whisk together the milk, red bell pepper, green onion, cilantro, egg, and vegetable oil.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Heat a skillet over medium heat and lightly grease with oil.

Drop spoonfuls of the cornmeal batter onto the skillet and cook for 3-4 minutes on each side, or until golden brown.

In a bowl, combine the diced avocados, red onion, tomato, lime juice, salt, and pepper to make the avocado salsa.
