Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 cup peanut butter
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  2. In a separate bowl, mix together the milk, peanut butter, melted butter, vanilla extract, and eggs.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

  5. Scoop 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.

  6. Serve the pancakes warm with your favorite toppings, such as maple syrup, sliced bananas, or chopped peanuts.
