How To Make Coleslaw with Tahini Yogurt Dressing

- 4 cups shredded cabbage
- 1 carrot, grated
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup tahini
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 clove garlic, minced
- Salt and pepper to taste

In a large bowl, combine the shredded cabbage, grated carrot, parsley, and mint.

In a separate bowl, whisk together the tahini, Greek yogurt, lemon juice, honey, garlic, salt, and pepper until smooth and creamy.
