Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 2 tablespoons tahini
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, toss sweet potatoes and chickpeas with olive oil, paprika, cumin, salt, and pepper until well coated.

  3. Spread the sweet potatoes and chickpeas in an even layer on a baking sheet. Roast for 30 minutes or until crispy, flipping halfway through.

  4. In a small bowl, whisk together Greek yogurt, tahini, lemon juice, garlic, salt, and pepper.

  5. Serve the crispy sweet potatoes and chickpeas with a dollop of tahini yogurt on top. Garnish with fresh cilantro.
