Ingredients

  • 1 sheet of puff pastry
  • 2 medium courgettes, thinly sliced
  • 1/4 cup pine nuts
  • 1 cup ricotta cheese
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry sheet and place it on a baking sheet.

  3. In a skillet, heat the olive oil over medium heat. Add the courgette slices and cook until softened, about 5 minutes.

  4. Add the minced garlic, dried thyme, salt, and pepper to the courgettes. Cook for another minute.

  5. Spread the ricotta cheese evenly on the puff pastry, leaving a small border around the edges.

  6. Arrange the cooked courgettes on top of the ricotta and sprinkle with pine nuts.

  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.

  8. Allow the tart to cool slightly before slicing and serving.
