How To Make Halloumi, Carrot & Orange Salad

Ingredients
- 1 pack of halloumi cheese, sliced
- 4 carrots, grated
- 2 oranges, peeled and segmented
- 1/4 cup of fresh mint leaves
- 1/4 cup of chopped pistachios
- 2 tbsp of olive oil
- 1 tbsp of lemon juice
- Salt and pepper to taste
Instructions

Preheat a grill or a non-stick pan over medium heat.

Grill the halloumi slices for about 2 minutes on each side or until golden brown. Set aside.

In a large bowl, combine the grated carrots, orange segments, mint leaves, and chopped pistachios.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the salad and toss gently to combine.

Serve the salad topped with grilled halloumi slices.
