How To Make Star Anise Meringues with Mango Coulis & Raspberries

- 4 large egg whites
- 1 cup of granulated sugar
- 1 tsp of star anise powder
- 1/4 tsp of cream of tartar
- 1 ripe mango, peeled and diced
- 1 tbsp of lemon juice
- 1 cup of fresh raspberries
- Powdered sugar, for dusting
Instructions

Preheat the oven to 200°F (95°C) and line a baking sheet with parchment paper.

In a clean, dry bowl, whisk the egg whites until frothy. Add the cream of tartar and continue whisking until soft peaks form.

Gradually add the granulated sugar, one tablespoon at a time, while whisking continuously until stiff peaks form. Fold in the star anise powder.

Transfer the meringue mixture to a piping bag fitted with a large star-shaped tip. Pipe small mounds onto the prepared baking sheet.

Bake for 1 hour, or until the meringues are crisp and dry. Turn off the oven and let them cool completely inside.

In a blender, combine the diced mango and lemon juice. Blend until smooth and creamy.

To serve, place a dollop of mango coulis onto each plate. Arrange the meringues and raspberries on top. Dust with powdered sugar.
