How To Make Mini Meringues

Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.
In a clean and dry mixing bowl, beat the egg whites on high speed until soft peaks form.
Gradually add in the sugar, one tablespoon at a time, while continuing to beat the egg whites. Beat until stiff peaks form and the mixture is glossy.
Gently fold in the vanilla extract.
Transfer the meringue mixture to a piping bag fitted with a star tip.
Pipe small mounds of meringue onto the prepared baking sheet.
Bake for 60 minutes, or until the meringues are dry and firm to the touch. Turn off the oven and let them cool completely inside.
Once cooled, carefully remove the meringues from the parchment paper.
