How To Make Vegan Christmas Cake
A delicious and festive cake perfect for celebrating Christmas without using any animal products.

Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup vegan margarine
- 1 cup brown sugar
- 1 cup unsweetened applesauce
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1/2 cup mixed candied fruit
Instructions

Preheat the oven to 350°F (175°C) and grease a cake pan.

In a large bowl, whisk together the flour, baking powder, and baking soda.

In a separate bowl, cream together the vegan margarine and brown sugar until light and fluffy.

Mix in the applesauce, almond milk, vanilla extract, cinnamon, nutmeg, and cloves.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the walnuts, raisins, and candied fruit.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 1 hour 30 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, decorate the cake with powdered sugar, vegan icing, or fresh fruit.
