  • 2 cups grated parsnip
  • 1/2 cup honey
  • 1/2 cup coconut oil
  • 1/4 cup shredded coconut
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.

  2. In a large bowl, combine the grated parsnip, honey, coconut oil, shredded coconut, and eggs. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  5. Pour the batter into the greased cake pan and smooth the top.

  6. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool before serving.
