How To Make One-Pan Pigeon Breast with Spinach & Bacon

A flavorful and easy-to-make dish with tender pigeon breast, sautéed spinach, and crispy bacon.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 4 pigeon breasts
  • 8 slices of bacon
  • 4 cups of fresh spinach
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat and cook the bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.

  2. Season the pigeon breasts with salt and pepper. Add them to the skillet, skin-side down, and cook for 5-6 minutes until browned and crisp. Flip the breasts and cook for an additional 4-5 minutes. Remove the pigeon breasts from the skillet and set aside.

  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.

  4. Place the pigeon breasts back into the skillet with the spinach and bacon. Cook for an additional 2-3 minutes until heated through.

  5. Serve the pigeon breasts with spinach and bacon on a plate.
