Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 8 slices bacon
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a bowl, mix together the chopped spinach and ricotta cheese. Season with garlic powder, dried thyme, salt, and pepper.

Butterfly each chicken breast by slicing horizontally through the middle, without cutting all the way through.

Spread a spoonful of the spinach and ricotta mixture onto one side of each chicken breast, then fold over the other side to enclose the filling.

Wrap each stuffed chicken breast with 2 slices of bacon, securing with toothpicks if necessary.

Place the bacon-wrapped chicken breasts onto a baking sheet lined with parchment paper.

Bake for 25 minutes or until the chicken is cooked through and the bacon is crispy.

Remove from the oven and let it rest for a few minutes before serving.
