Ingredients

  • 4 cups broccoli florets
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, and sauté until softened.

  2. Add broccoli florets and broth. Bring to a boil, then reduce heat and let simmer until broccoli is tender.

  3. Using an immersion blender or a blender, puree the soup until smooth.

  4. Add cheddar cheese and milk to the soup and stir until cheese is melted and well combined.

  5. Season with salt and pepper to taste.
