Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1 head romaine lettuce, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, cook shrimp over medium-high heat until pink and cooked through, about 4-5 minutes.

  2. In a large bowl, combine cooked shrimp, olives, feta cheese, lettuce, red onion, and cherry tomatoes.

  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make a dressing.

  4. Drizzle dressing over salad and toss to combine.

  5. Serve immediately.
