How To Make Blackened Shrimp Avocado Burrito Bowls

Enjoy layers of deliciousness in these loaded burrito bowls! They’re made of rice, beans, and smoky-seasoned shrimp, drizzled with a creamy and tangy ranch.

  • 1lblarge shrimp,peeled and deveined
  • 1tbspchili powder
  • 2tsppaprika
  • 1tsponion powder
  • 1tspcumin
  • ½tspgarlic powder
  • 1tspsalt
  • ¼tsppepper
  • 2tbspolive oil,divided
  • 1cancorn
  • 1canblack beans
  • 2cupsbrown rice,cooked
  • 2avocados,sliced

For Greek Yogurt Avocado Cilantro Ranch:

  • 1avocado
  • ¼cupcilantro,chopped
  • ¼cupgreek yogurt
  • 1garlic clove
  • 3tbspolive oil,add more for smoother consistency
  • ½tspsalt
  • ¼tsppepper


  1. In a large bowl, add the shrimp, chili powder, paprika, onion powder, cumin, garlic powder, and salt and pepper.

  2. In a medium sized skillet, add the olive oil and shrimp. Cook over medium high heat until no longer pink.

Greek Yogurt Avocado Cilantro Ranch:

  1. In a food processor, add the avocado, cilantro, Greek yogurt, garlic, olive oil and salt and pepper. Pulse until smooth. Add a little water if smoother consistency is desired.

To Assemble:

  1. Divide the shrimp, corn, black beans, rice, and avocado evenly. Drizzle with dressing.

  2. Serve immediately and enjoy.
