Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil
  • 8 large lettuce leaves
  • 1 red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • Lime wedges, for serving

Instructions

  1. In a large bowl, whisk together honey, lime juice, garlic, salt, and pepper.

  2. Add shrimp to the bowl and toss to coat.

  3. Heat vegetable oil in a large skillet over medium-high heat.

  4. Add shrimp to the skillet and cook for 2-3 minutes on each side, or until pink and cooked through.

  5. To assemble, place lettuce leaves on a platter.

  6. Divide shrimp among the lettuce leaves.

  7. Top with red bell pepper and cilantro.

  8. Serve with lime wedges on the side.
