Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 2 tbsp. vegetable oil

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt.

  2. In a separate bowl, whisk together milk, pumpkin puree, eggs, and vegetable oil until well combined.

  3. Add wet mixture to dry mixture and mix until just combined.

  4. Heat a non-stick skillet or griddle over medium heat and lightly oil.

  5. Pour 1/4 cup batter onto skillet for each pancake. Cook until bubbles begin to form and edges turn golden brown, then flip and cook until golden brown on the other side.

  6. Serve hot with butter and syrup.
