  • 2 tbsp olive oil

  • 3 cloves garlic, minced
  • 1 tbsp ginger paste
  • 2 tbsp tikka masala spice blend
  • 1 cup tomato puree
  • 1 cup low-sodium chicken broth
  • 1 cup coconut milk
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, combine the chicken cubes and Greek yogurt. Mix well and let marinate for at least 30 minutes.

  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened.

  3. Add the minced garlic and ginger paste to the skillet. Cook for another minute.

  4. Stir in the tikka masala spice blend and cook for 1-2 minutes, until fragrant.

  5. Add the marinated chicken cubes to the skillet and cook until browned on all sides.

  6. Pour in the tomato puree, chicken broth, and coconut milk. Stir well to combine.

  7. Cover the skillet and simmer for 15-20 minutes, until the chicken is cooked through and the flavors are well blended.

  8. Season with salt to taste.

  9. Serve the healthy tikka masala over steamed brown rice or with whole wheat naan.
