How To Make Japchae

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 8 ounces of Korean sweet potato noodles (dangmyeon)
  • 8 ounces of beef (sirloin or ribeye), thinly sliced
  • 2 tablespoons of soy sauce
  • 2 tablespoons of sesame oil
  • 2 tablespoons of vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, cut into matchsticks
  • 4 ounces of spinach
  • 4 ounces of mushrooms (shiitake or white button), sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of sugar
  • Salt and pepper, to taste
  • 2 green onions, thinly sliced

Instructions

  1. Cook the sweet potato noodles according to the package instructions. Drain and rinse with cold water. Set aside.

  2. In a bowl, marinate the beef with soy sauce and sesame oil. Set aside for 10 minutes.

  3. Heat vegetable oil in a large pan or wok over medium heat. Add the onion and carrots, and stir-fry for 3-4 minutes until they start to soften.

  4. Add the spinach, mushrooms, and garlic. Stir-fry for another 2 minutes until the spinach wilts.

  5. Push the vegetables to one side of the pan and add the marinated beef. Cook for 2-3 minutes until the beef is cooked through.

  6. Add the cooked noodles to the pan and toss everything together. Season with sugar, salt, and pepper.

  7. Stir-fry for another 2-3 minutes until the noodles are well combined with the vegetables and beef.

  8. Remove from heat and garnish with green onions.

  9. Serve hot and enjoy!
